248 calorie lunch

3 oz frozen unbreaded chicken bites = 90 calories
1 TBS BBQ sauce = 20 calories (check labels! )
3 oz frozen roasted baby potatoes = 90 calories
1 cup salad = 8 calories
1/2 TBS balsamic vinaigrette = 15 calories
Half a kiwi = ~25 calories
Green Tea = 0 calories

RECIPE:
Balsamic Vinaigrette:
2 TBS Balsamic Vinegar
1 TBS Red Wine Vinegar
1 TBS Extra Virgin Olive Oil
1 tsp Lemon Juice
1/2 tsp Stevia
1 large pinch oregano
1 large pinch garlic powder
1 small pinch sea salt

Mix all ingredients together.  Stir each time before serving.
The only calories in this recipe comes from the oil, which adds 120 calories to the entire batch (which comes to just over 4 TBS).  For this size salad, one-half tablespoon of vinaigrette was plenty.  The children have aske me to make this dressing every time. =).
